Spaghetti and Meatballs Serves 3-6 people Ingredients 1.5 lbs Ground beef 1/2 Bunch basil, chopped ¼ Bunch Parsley, chopped 4 pieces Prosciutto, finely diced Salt and Freshly ground black pepper, to taste 1 Onion, finely diced and sautéed 5 garlic cloves, minced and sautéed with the onion ½ tsp. Chilli flake 1/2 cup Milk 2 slices of Bread or 1/4 of a baguette, torn into small pieces 1 tsp. Worcestershire sauce 2 Eggs ⅛ tsp. Grated nutmeg 1 tsp Oregano 1.5L Tomato Sauce Olive oil 2 lbs Spaghetti Preparation Place the torn baguette into a medium mixing bowl and pour over the milk and season with salt and freshly ground black pepper. Let that sit for 5-10 mins. To that add in the basil, parsley, sauteed onion/garlic, chilli flakes, worcestershire sauce, 2 eggs, grated nutmeg, and oregano give that a slight mix until combined. Once combined add in the ground beef and prosciutto and mix until fully combined. Season with salt and freshly ground black pepper. Form the meat mixture into balls (125g each) and reserve to the side. In a medium sauce pot on medium heat add in olive oil, enough to coat the bottom of the pan. Once the oil is shimmering, sear the meatballs until golden brown on both sides. Work in batches if needed. Once they are golden brown add in the tomato sauce and cook for at least 1 hour or until tender. Stir occasionally. Meanwhile, cook the spaghetti in a large pot of boiling salted water, stirring occasionally, until al dente (1-2 mins before the package instructions). Drain, reserving 1 cup pasta cooking liquid. Return pasta to pot. Add in the tomato sauce from the meatballs, along with some pasta cooking water and stir until combined. Optionally add in a few pieces of butter and mix until emulsified. Taste to season with salt and freshly ground black pepper. Plate the spaghetti with sauce over top and 3-4 meatballs. Garnish with fresh basil and freshly grated parmesan cheese.
