I think there are many people like me who are too much to biryani. I have tried a lot of Indian biryanis but this is unique for its aroma that comes from the freshly ground spices. This one is my favourite. Served them with raita or red n green chilli chutneys. Ingredient basmati and sela rice 500g Chicken 1 kg 1 litre water FOR POTLI : 1 big size sliced onion 4 green chillies 2 inch ginger sliced (6 garlic, 8-10 cloves, 4 green cardamoms, 2 black cardamoms, 1tsp cumin seeds, 1dagad fool,1 inch Cinnamon, 1 Javitri, 10 peppercorns, 1 Bay leaf ) , 1/2 tsp hing For masala : 2 tbsp Oil 1 bay leaf 2 Green Cardamoms 6 cloves 1 tsp cumin seeds 1 tsp shahi jeera 2 big size onions 8 green chillies 1 tbsp ginger garlic paste Salt to taste 1 tsp garam masala powder 1 tsp corinder powder 1 tsp cumin powder 2 tsp red chilli powder FOR BIRYANI LAYER : 1 tsp keora jal 1/2 tsp red food colour 1/2 tsp yellow food colour Chopped coriander leaves Juice of 1 lemon 1tbsp Ghee (optional)
