Masala Khichdi Recipe Ingredients: • 1/2 cup rice • 1/4 cup yellow moong dal (or any lentil of choice) • 1 small onion (chopped) • 1 small tomato (chopped) • 1/2 teaspoon mustard seeds • 1/2 teaspoon cumin seeds • 1/2 teaspoon turmeric powder • 1/2 teaspoon red chili powder (adjust to taste) • 1/2 teaspoon garam masala • 1/2 teaspoon coriander powder • 1/2 teaspoon ginger-garlic paste • 1/2 cup mixed vegetables (carrot, peas, beans, potato, etc.) • 2 cups water • 1 tablespoon ghee or oil • Salt to taste • Fresh coriander leaves for garnish Instructions: 1. Rinse and soak the rice and moong dal for about 15 minutes. Drain and set aside. 2. Heat ghee or oil in a pressure cooker or pot. Add mustard seeds and cumin seeds, and let them splutter. 3. Add chopped onions and sauté until golden brown. Then, add ginger-garlic paste and sauté for a few seconds. 4. Add chopped tomatoes and cook until soft. 5. Mix in the turmeric, red chili powder, garam masala, and coriander powder. Stir well. 6. Add chopped vegetables and mix. 7. Add the soaked rice and dal, stir everything together, and cook for a minute. 8. Pour in 2 cups of water, add salt, and mix well. 9. Pressure cook for 2-3 whistles (or cook covered in a pot until soft). 10. Let the pressure release naturally. Open the lid, mix well, and adjust the consistency if needed (add more water if too thick). 11. Garnish with fresh coriander leaves and serve hot with yogurt, pickle, or papad.
