WHAT'S FOR DINNER? | EASY WEEKNIGHT MEALS We are excited to be back with 3 more easy weeknight meals in this week's What's for Dinner! QUESO CHICKEN: https://www.closetcooking.com/chile-c... MY NOTES - I would use less milk - maybe 1.5 cups instead of the 2 to help make it thicker next time. I would also add Rotel instead of salsa and some different types of cheese just to give the sauce a little more flavor. SUBBIE SUPPER Submitted by Kathy SWEET AND SOUR CHICKEN: 2 boneless, skinless chicken breasts, cut into 1 inch cubes 1/2 cup cornstarch 3 T. olive oil 1 lg. onion, thinly sliced 1 green pepper, sliced 1 clove garlic, minced 1 - 16oz can unsweetened pineapple chunks, drained but reserve the juice 1/4 c. red wine vinegar or cider vinegar 1 T. EACH: soy sauce, ketchup, cornstarch, brown sugar 1/2 tsp. ground ginger 1/2 tsp black pepper 3/4 cup water few drops of hot sauce Put 1/2 cup cornstarch and chicken in a plastic bag and shake to coat. In a large skillet, brown the chicken in 2 T. olive oil. Transfer the cooked chicken to a plate. In the same skillet add 1 T olive oil and saute your onions, green pepper, and garlic for a couple of minutes. Add your pineapple chunks (not the juice) and add your chicken back in. Turn the skillet to low. FOR THE SAUCE: In a med. saucepan add: pineapple juice, water, vinegar, soy sauce, ketchup, 1 T cornstarch, brown sugar, ginger and black pepper. Bring to a boil over med. heat. Allow to thicken and become clear. (about 3-5 minutes). Once the sauce is done, pour it over the chicken mixture and allow to cook on low for 5 more minutes.
