The history of Patbingsu(Shaved Ice with Red Beans) is very old. The oldest known record similar to shaved ice dates back to around 3000 BCE in China, where finely crushed ice was mixed with honey and fruit juices to make a dish called Milsabing. There are also records of similar desserts being enjoyed in Korea since the Joseon Dynasty(1392-1910). It’s fascinating and interesting to think of it as a summer dessert from before the invention of ice cream. This summer, Korea experienced record-breaking tropical nights and extreme heat. So, I'd like to introduce you to how to make Patbingsu to cool off from the scorching heat. Here's a simple recipe for making Patbingsu(Korean Shaved Ice with Red Beans) at home. Ingredients: Shaved ice 500g red beans 250g sugar 1 tablespoon potato starch 1 cup milk Tteok(Korean rice cakes) Instructions: Making Shaved ice: You can make shaved ice by blending ice cubes in a blender until finely crushed or use a shaved ice machine. Making red bean paste: Let 500g of red beans soak in water for 7-8 hours. Place the soaked red beans and water in a pot, and once it starts boiling, discard the first batch of boiling water. (This helps to remove the bitterness from the red beans) Rinse the beans, add fresh water, and boil them again for 30-40 minutes. Once the red beans are cooked until they are easily mashed, add 250g of sugar and simmer for 5 minutes. If the mixture isn’t thick enough, add potato starch to adjust the consistency. **If you add sugar equal to half the amount of the red beans, it won’t be too sweet when eaten with the ice. If you prefer a sweeter taste, add an amount of sugar equal to the amount of red beans. Preparing Tteok (Korean rice cakes): Any type of rice cake is fine. I like Injeolmi(made from the glutinous rice and coated with bean flour), so I bought some Injeolmi. Place the shaved ice in a bowl, then top it with the red bean paste and rice cakes. Adding milk makes it even more delicious. Enjoy it on a hot day! **You can also add jelly, fruits, or sweetened condensed milk.
