This gluten free brioche style dough is incredibly easy to work with. Fill it with whatever you are dreaming of. Don’t wait, enjoy while it’s hot, while it lasts 🤤 Dough Specs: 300g GF bread flour @kingarthurbaking 100g water 150g milk 120g GF sourdough starter 6g salt 1 egg 75g sugar 85g butter (softened) Filling: chopped scallions, shredded mozzarella and prosciutto (didn’t measure but be generous) Process: Mix everything together in a mixer with the PADDLE attachment. It’s very very sticky…think cookie/cake batter Transfer it to a lightly greased bowl and roughly shape it into a ball Cover and let rise for 6hrs at 80F Refrigerate overnight Divide and shape cold from the fridge the next day as seen in reel Let rise for another 3-4hrs at 80F Brush on egg wash Top with sesame seeds (optional) Bake at 400F for 35-40mins or until golden Best enjoyed while warm the same day Refresh leftover individual buns in microwave for 30 seconds
