Once they get the Maple Bourbon bath... Be prepared to lick the plate. 1/3 cup chopped and packed dates ( 75 ml) - I used Medjool 1/4 cup chopped and packed dried black figs (60 ml ) I used Greek 1 cup water (250 ml) 1 tsp. freshly grated ginger (5 ml) 1 tsp. baking soda (5 ml) 1/2 cup pumpkin puree (125 ml) 3/4 cup all purpose flour (175 ml) sifted 1 tsp. ground cinnamon (5 ml) 1/2 tsp. baking powder ( 2 ml) 1/4 tsp. ground allspice ( 1ml) pinch freshly grated nutmeg pinch salt 1/3 cup butter (75 ml) softened 1/2 cup dark brown sugar (125 ml) ( I used Moscovado) 2 eggs, room temp 1/2 tsp. vanilla (2.5 ml) grated zest of 1 orange Bourbon Toffee Sauce: 1 Tbsp. butter (25 ml) 1/4 cup dark brown sugar (60 ml) 1/3 cup whipping (35 % ) cream (75 ml) 2-4 Tbsp. Smoked Maple Bourbon (25- 50 ml) Preheat oven to 350 D F. Butter six 6 oz. (175 ml ) ramekins - or muffin tin In a medium saucepan , combine the dates, figs, ginger and water. Simmer uncovered over medium heat until most of water is evaporated. Puree and add the baking soda. Stir in pumpkin puree and set aside. Sift together the all the flour with spices and salt. With paddle attachment, cream together the butter and brown sugar until fluffy. Add vanilla and the eggs, one at a time. Scraping down and beating well between each addition. Add the orange zest and alternately add pumpkin mixture with flour mixture, beating on low speed until well blended. Pour batter into buttered ramekins and bake for 20-25 minutes at 350 D F or 175 D C. , or until tester comes out clean. Meanwhile, for sauce, melted butter and brown sugar over medium heat. Stir to blend until thick and bubbly, about 3-4 minutes. Add cream and bourbon, careful that it may splash. Cook for 7-9 minutes without stirring , until thick and syrupy. Flip puddings ( cakes ) onto plates and drizzle while warm with hot sauce for best texture.
