Soup Playlist: • Soup Recipes Full Written Recipe of Cream of Mushroom Soup Prep time: 5-10 minutes Cooking time: 20-25 minutes Serves: 3-4 people Ingredients: MUSHROOM | मशरूम 400 GRAMS BUTTER | मक्खन 2 TBSP OLIVE OIL | ऑलिव ऑइल 1 TSP ONION | प्याज़ 2 NOS. (CHOPPED) GARLIC | लहसुन 1 TBSP (CHOPPED) CELERY | सैलरी 2-3 STALKS (ROUGHLY CHOPPED) WHITE WINE / HOT WATER | व्हाइट वाइन / गरम पानी 200 ML REFINED FLOUR | मैदा 4 TBSP OLIVE OIL | ऑलिव ऑइल 1 TBSP STOCK CUBE | स्टॉक क्यूब 1 NO. HOT WATER | गरम पानी AS REQUIRED SALT | नमक TO TASTE BLACK PEPPER | काली मिर्च A LARGE PINCH (FRESHLY CRUSHED) THYME | थाइम A LARGE PINCH (OPTIONAL) FRESH CREAM | फ्रेश क्रीम 2 TBSP (OPTIONAL) SALT | नमक IF REQUIRED Method: Wash the mushrooms & wipe them dry using a clean kitchen napkin & then slice them roughly. Set a stockpot over high heat & let it get hot, add butter & let the butter melt, then add olive oil. Add onions, stir well & cook over medium to low flame until they caramelize & turn brown in colour, this process will take 8-10 minutes. Further add garlic & celery, stir well & add the sliced mushrooms as well, stir well again & cook over high flame until the mushrooms turn golden brown, they will release a lot of moisture initially so cook until all the moisture gets evaporated. During this process fond (brown bits of the mushrooms & onions) will get accumulated at the bottom Once the mushrooms have cooked & the moisture gets evaporated, add wine/hot water & gently scrape the bottom of the stock pot so that the fond gets mixed, this is called deglazing. Cook again until all the moisture evaporates over high flame & then add refined flour, stir well & add some more olive oil, cook for 2-3 minutes. Further add stock or if you have a stock cube then just dissolve it in some hot water & add that, you can also just add hot water. Add more hot water to adjust the consistency of the soup & add salt, black pepper & thyme, let the soup simmer for 5-6 minutes until it thickens slightly. Blend the soup using a hand blender until smooth & creamy. You can also use a mixer grinder but make sure you cool the soup down to room temperature before grinding, then add it back to the stock pot & heat it up. Lastly add fresh cream & then taste & adjust salt if required.
