Ramadan special 4 recipes/Chicken chutney kebab/chicken satay/Tandoori chicken bites/Chicken shami kebab 1) Chicken Chutney Kebab. Ingredients: 1/2 kg chicken keema or chicken pieces 1cup bread crumbs 1 tbsp ginger garlic and chilly paste 1 tbsp corriander pwd 1 tsp cumin pwd 1 tsp garam masala 1 tsp black pepper 1 tbsp tandoori masala 1 tsp salt 1 finely chopped onion Corriander and mint leaves Grind 1 tsp chat masala Mix For chutney Grind 1/2 cup corriander, 1/4th cup mint leaves, 1/4 th tsp cumin seeds, 4 garlic cloves, green chilly,salt and lemon Add 1 tbsp mayonnaise and 1 tbsp Mozarella cheese(optional) Add 1 tbsp butter to the keema mixture Mix Take 1 small portion Make it flat in a plastic sheet as shown Apply some water on hands if it is sticky Cut a cheese slice into four parts (You can even add a bigger slice if you like) Add the chutney mixture Roll as shown Roll in bread crumbs You can freeze and store at this stage in an airtight container for 1 month Whisk 2 eggs with salt pepper and 1 tbsp water Dip the kebabs into the egg mixture Deep fry till brown Serve. ********************************************** 2) Street style Chicken Satay. Ingredients: 1/2 kg boneless chicken 1 tsp salt 1 tsp white pepper 1 tsp black pepper 1 tbsp tandoori masala 1 tsp chat masala 1/2 tsp garam masala 1/4 th tsp tandoori red colour 1 tsp sesame seeds 1 tsp red chilly pwd 2 tbsp cornflour 1 tbsp maida 1 tbsp ginger garlic and chilly paste 2 tbsp curd 1 tbsp fresh cream 1 egg Mix well and marinate for 1/2 an hour Skewer the chicken pieces Shallow fry or deep fry in hot oil Keep 1 to 2tbsp oil and remove the excess oil In the same pan add 1 tsp cumin seeds, Few curry leaves 1 tbsp ginger garlic and chilly paste Add 1 tsp soya sauce, 1 tbsp tomato hot and sweet, 1 tbsp schezuan sauce and 1 tsp chilly sauce 1/2 tsp black pepper 1/2 tsp chat masala 1/4 th tsp garam masala Salt to taste Pinch of tandoori red colour Add 1 tsp cornflour dissolved in 1/2 cup water Mix well Cook till it turns thick Pour over the fried sticks Garnish with corriander and white sesame seeds. ************************************************** 3) Crispy Thread Tandoori Chicken Bites. Ingredients: 1/4 th kg boneless chicken cut into 1 inch cubes 1 tbsp curd 1 tsp ginger garlic and chilly paste Salt 1 tsp tandoori masala 1 tsp red chilly pwd 1/2 tsp garam masala 1 tsp cumin pwd 1 tsp corriander pwd 1/2 tsp kasuri methi 1/2 tsp chat masala 1/4 th tsp tandoori colour 1/4 th tsp turmeric 1 tsp cornflour Mix and marinate for 1/2 an hour Coat in threads and deep fry on medium flame till chicken is cooked Enjoy. ******************************************** 4) Quick and easy Chicken Shami Kebab. Ingredients: 1/4 kg boneless chicken 1 bay leaf 1 star anise 1 small potato 1 onion 1/2 cup chana dal 1 tsp salt 1 tbsp red chilly pwd 1 tbsp corriander pwd 1 tbsp cumin pwd 1 tsp all spice pwd 1/4 th tsp turmeric pwd 1 tbsp ginger garlic and chilly paste 1 tsp chat masala 1/2 cup water Pressure cook for 1 whistle Open after the pressure drops Dry out the extra water if any on high flame Transfer in to a mixer jar Add 1/2 cup fried onions Grind Add 1 egg Corriander and mint leaves and 1 onion finely chopped Mix well Make kebabs and shallow fry.
