Wash the potatoes, peel them, remove the sprouts, and slice them into thick strips using a slicer. 2. Wash the potatoes in several changes of water until the water runs clear, then let them soak for 10 minutes. 3. Wrap the potatoes in a dish towel and squeeze them thoroughly. Place them in a pot, add the oil, and heat over low-medium heat. 4. Once they start to simmer, reduce the heat to low, stirring constantly to prevent burning, and simmer until soft. (about 10 minutes) ⑤ Drain in a colander. Press down to drain. Transfer half of the mixture to a bowl and strain the remaining half. ⑥ Add cornstarch and salt to ⑤ and mix well. ⑦ Shape the mixture on a baking sheet. I made mine 85g each, 6cm wide, 10cm long, and 1.5cm thick. ⑧ Wrap in plastic wrap and freeze until firm. ⑨ Add rice oil and lard to a frying pan and fry at 180°C for 4-5 minutes.
