Pineapple Coconut Banana Bread - Quick Bread Recipe - Twisted Mikes

Mom make us this delicious bread recipe. This bread is full of flavor and one of our favorite quick bread recipes. She uses a combination of bananas, toasted coconut, pecans, and pineapple to create a perfectly balanced flavored bread. You must give it a try. Recipe Preheat oven to 350 Take 1 tbsp of melted butter and brush inside of bread pan. After buttered sprinkle pan with 1 tbsp sugar. Sugar both the bottom and the sides of the pan. In a mixing bowl combine 2 cups of flour 1 tsp of baking powder 1/2 baking soda 1/4 tsp salt mix well In a mixing bowl combine the following 1 stick of softened butter ( 1/2 cup) 2 large eggs 1 large banana mashed 1 cup sugar 1 cup of crushed pineapple including juice Once mixed well combine with dry ingredients and mix. Once mixed add the following: 1/2 cup toasted coconut ( if you don't want to toast, just use sweetened coconut, it will turn out a little sweeter, but still delicious) 1/2 cup of pecans mix well. Put in buttered and sugared bread loaf pan. Sprinkle 1 tsp of sugar on top. Bake for 60 minutes. Let cool, run knife around edges of pan. Enjoy.
