One easy dough, perfect for toast, sandwiches, breakfast, and every meal. Ingredients (US units): Bread flour: 650 g (22.93 oz | about 5 1/2 cups) Instant dry yeast: 6 g (about 2 tsp) Cold water (18–20°C / 64–68°F): 490 ml (16.57 fl oz | about 2 cups + 1 Tbsp) Salt: 8 g (about 1 1/3 tsp) US cup measurement is based on 240 ml. The Science of Bread: How to Calculate Hydration?The texture of your bread is determined by its Hydration Ratio. This is the ratio of water to flour by weight. Formula:$(Water Weight / Flour Weight) \times 100 = Hydration Percentage Calculation for this recipe:$490ml (g) / 650g = 0.753 Result: 75% Hydration.Why it matters?A 75% ratio creates a soft, airy interior (crumb) and is perfect for no-knead methods as the high water content helps gluten develop naturally. Quick method (no kneading): Mix everything until no dry flour remains. Rest 30–40 minutes. Wet your hand and fold from the outside to the center (2–3 minutes). Cover and rest until doubled (about 1.5 hours). Divide into 2 pieces, rest 30–40 minutes, then bake at 220°C / 428°F for about 25 minutes.
