MELITA’S HOMEMADE BANANA PUDDING

Recipe : Banana Pudding Pudding recipe: Separate 4 eggs in two bowls save egg whites for later 1/2 cup sugar 1/3 cup self rising flour Pinch of salt 4 egg yolks 2 1/4 cups of milk 2 table spoons butter 1 tsps good vanilla extract 1 box vanilla wafers (I like Nabisco) In microwave safe bowl (I use a glass batter bowl) measure milk add flour,salt, sugar,butter, eggs whisk together good. Add vanilla Microwave on high two minutes at a time, whisking until smooth each time (you don’t want it too thick ) the last time whisk hard until real smooth. Put plastic wrap on top to prevent forming a skim on top and let cool. Egg white topping: 4 egg whites 1/4 cup sugar 1/2 tsp cream of tarter ( I was out of cream of tarter so I used meringue powder) Place egg whites you set aside in medium mixing bowl Whip until frothy with electric mixer Add sugar whip more when stiff peaks form add meringue powder whip until stiff again Assembling pudding In bowl spoon a layer of pudding, next a layer of cookies, then bananas Do this until last layer. I don’t put cookies on last layer. Spoon meringue on top place cookies around edge pace in oven with broiler on this wont take long watch carefully until egg whites whites brown. Some people say cook egg whites longer I don’t and have never been sick. Enjoy!!!!!!
