Portion servings: 5-6 pax Preparation time: 05 mins Cooking time: 50 mins Ingredients: For Green Pea Idli Green peas 1 cup Green chilli 2 pcs Coriander a handful Water as required Suji 1½ cup Curd ½ cup Green peas paste Salt 1 tsp Sugar ½ tsp Carrot chopped ½ cup Water as required Fruit salt / eno 1 tsp For tadka: Oil 2 tbsp Urad dal 1 tbsp Mustard seeds 1 tsp Curry leaves 15-18 pcs For Chutney: Fresh coconut chopped 1 cup Green chilli 2 pcs Ginger ½ inch Garlic 4-5 cloves Roasted chana dal 1 tbsp Tamarind 1 tsp Jaggery 1 tsp Water as required For tadka: Oil 2 tbsp Urad dal 1 tbsp Mustard seeds 1 tsp Curry leaves 15-18 pcs Method: Step 1: Prepare Green Pea Paste In a blender, combine green peas, green chilies, coriander, and a little water. Blend until a smooth paste forms and set it aside. Step 2: Prepare Idli Batter In a mixing bowl, add suji and curd, then mix to form a smooth base. Add the prepared green pea paste and combine well. Season with salt and sugar. Mix in chopped carrots to add texture and flavor. Gradually add water to adjust the batter to a thick, pourable consistency. Just before steaming, fold in fruit salt or eno to aerate the batter. Be gentle while mixing to maintain its lightness. Step 3: Tadka for Idli Batter Heat oil in a pan. Add urad dal and mustard seeds, allowing them to splutter. Toss in curry leaves and let them turn crisp and aromatic. Pour this tadka into the batter and mix lightly to distribute the flavors evenly. Step 4: Steam the Idlis Grease idli plates with a little oil to prevent sticking. Pour the batter into the molds, filling each halfway to allow room for rising. Place the molds in a preheated steamer and steam until the idlis are cooked and fluffy. Check doneness by inserting a toothpick; it should come out clean. Once done, remove the idlis from the steamer and let them cool slightly before demolding. Method for Chutney Step 1: Blend the Ingredients In a blender, combine fresh coconut, green chilies, ginger, garlic, roasted chana dal, tamarind, and jaggery. Add water gradually and blend to a smooth consistency. Adjust the amount of water to achieve your preferred texture. Step 2: Tadka for Chutney Heat oil in a small pan. Add urad dal and mustard seeds, letting them splutter. Add curry leaves and fry until they turn aromatic and crispy. Pour this tadka over the chutney and stir well to enhance its flavor.
