We make different styles of dal in different places due to the difference in culture and cooking habits. There's dal with leafy vegetables, there's dal with vegetables like mango, cucumbers, tomatoes, brinjals, pumpkin, bottle gourd, ridge gourd etc in the south of India. In the north of India, the dal is a masala based curry most of the time except for a few recipes like Varan bhaat which are very traditional and close the native cooking.
