A Full Day of 1960s Meals: • A FULL DAY of 1960s Meals 🍽️ vintage ... ------------------------------ IMPOSSIBLE VEGETABLE PIE (pg 43) 2c chopped fresh broccoli or cauliflower florets* 1/2c chopped onion 1/2c chopped green pepper 1c shredded Cheddar cheese (about 4oz) 1 1/2c milk 3/4c Bisquick baking mix 3 eggs 1tsp salt 1/4tsp pepper Heat oven to 400. Lightly grease a 10" pie plate. Cook fresh broccoli or cauliflower to 1" salted boiling water. Cook until almost tender, about 5 minutes; drain thoroughly. Mix broccoli, onion, green pepper, and cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand mixer. Pour into pie plate. Bake until golden brown and knife inserted halfway between center and edge comes out clean. Let stand 5 minutes before cutting. *1 - 10oz package of frozen chopped broccoli or cauliflower, thawed and drained, can be substituted for the fresh broccoli or cauliflower. Do not cook. GLAZED LEMON SQUARES (pg 76) 1c Bisquick baking mix 2Tbsp powdered sugar 2Tbsp firm butter 3/4c granulated sugar 1/4c flaked coconut, if desired 1Tbsp Bisquick baking mix 2 eggs 2Tbsp lemon juice 2tsp grated lemon peel Glaze (recipe below) Heat oven to 350. Mix 1 cup baking mix and the powdered sugar. Cut in butter. Press in ungreased 8x8" square pan. Bake until light brown, about 10 minutes. Mix remaining ingredients except glaze; pour over baked layer. Bake until set, about 25 minutes. Loosen edges from sides of pan while warm. Spread with Glaze. Cool completely; cut into about 1" squares. Glaze - Mix 1/2c powdered sugar and 1 Tbsp lemon juice until smooth. CHILI QUICHE APPETIZERS (pg 19) 1 can (4oz) green chilies, drained and chopped 2c shredded Monterey Jack or Cheddar cheese (about 8oz) 1c Bisquick baking mix 1c half and half 4 eggs 1/8tsp red pepper sauce, if desired. Heat oven to 375. Grease 9x9 square pan. Sprinkle chilies and cheese in pan. Beat remaining ingredients until smooth, 15 seconds in a blender on high speed or 1 minute with a hand mixer. Pour into pan. Bake until golden brown and knife inserted in center comes out clean, about 30 minutes. Let stand 10 minutes before cutting.
