Here's a basic recipe: Ingredients: 1/2 kg Chicken, cut into medium-sized pieces 1/2 kg Ripe Tomatoes, roughly chopped 4-6 Green Chilies, roughly chopped (adjust to your spice preference) * Salt to taste Black pepper to taste (optional) Vegetable oil or ghee Optional: Fresh coriander leaves, chopped, for garnish Instructions: Prepare the Ingredients: Wash and cut the chicken into desired pieces. Roughly chop the tomatoes. Roughly chop the green chilies and ginger. Cook the Chicken: Heat the oil or ghee in a karahi (wok) or a large, deep pan over medium-high heat. Add the chicken pieces and cook until they are lightly browned on all sides. Add Tomatoes, Ginger, and Chilies: Add the chopped tomatoes, ginger, and green chilies to the karahi. Stir well, ensuring the tomatoes release their juices. Cook Until Tomatoes Soften: Cover the karahi and cook over medium heat until the tomatoes have softened and become pulpy. This might take about 15-20 minutes. Stir occasionally to prevent sticking. Cook Down the Sauce: Remove the lid and increase the heat to medium-high. Continue to cook, stirring frequently, until the tomato sauce has reduced and thickened. The oil will begin to separate from the tomato mixture. Seasoning: Add salt and black pepper to taste. Adjust the amount according to your preference. Mix well. Final Cooking: Continue to cook for a few more minutes until the chicken is fully cooked and the sauce is thick and well-incorporated.
