Hi friends, ഉന്നക്കായ/Unnakaya ( spindle-shaped sweet dessert) originated from the Malabar region of India. Let see the recipe of Malabar special Unnakaya( Stuffed Plantain Fry) by kitchen poetry Ingredient Plantain banana(Ripe Banana) / Nendrapazham- 3 Ghee – 2 tsp Coconut – 1 cup grated Sugar – 3 cup Cardamom Powder – 1 tsp Cashews – 10-15tblspn Raisins – 10-1 5 tbsp Method: Place cleaned bananas in steamer and steam for 10 to 15 mins. Now let the banana cool, peel off the skin and mash it well. In a pan, melt ghee, add in cashews and raisins and fry for a min. Add in coconut and toss well. Add in sugar and cardamom powder. Mix well till the sugar starts to melts. Remove it to a bowl and let it cool a bit. Now take one portion of the smashed banana, flatten it in your oiled hand and spoon some coconut filling in. Wrap it and gently pat with your fingers to give it a spindle shape. Deep fry it in oil till golden. Drain onto the tissue.
