Our bananas were getting pretty brown so I decided to try to make a new recipe and it turned out AMAZING😍. This banana bread is made with a whole grain-- oats, is moist from the bananas, & stars a few protein ingredients to help stabilize blood sugar levels. This is also kid friendly for any momma out there 😉 Serves: 10 ✅Ingredients: 2 large overripe bananas 1/2 cup Cottage cheese 3 eggs 1/4 cup maple syrup 2 tsp vanilla extract 1.5 cups oat flour 1/2 cup vanilla protein powder 3 tsp baking powder 1/2 tsp salt 1 tsp cinnamon Optional: serve with cinnamon protein powder glaze (will boost protein even further) Instructions: 1. Lien a bread pan with parchment paper and preheat oven to 350F. Add the bananas to a large mixing bowl and mash the bananas. 2. Add cottage cheese, eggs, maple syrup, and vanilla extract into the large mixing bowl. Whisk together. 3. To the mixture, Add oat flour, vanilla protein powder, baking powder, salt, and cinnamon. Whisk together until combined. 4. Add mixture into bread pan and bake for 50 minutes or until a toothpick comes out clean. Enjoy!
