With just a few minutes of work the night before, our bread machine creates a flavorful, complex sourdough that's ready to shape and bake the next day. The slow, cold fermentation develops an amazing taste and texture that you just can't get from a quick dough. Follow along as our daughter shows you how simple it is to get pizzeria-quality crust at home! ** RECIPE: Slow-Fermented Sourdough Pizza Dough (Bread Machine Method) ** Part 1: The Night Before (The Mix - 10 minutes) Ingredients: ¾ cup (180ml) Lukewarm Water ½ cup (113g) Active, Bubbly Sourdough Starter 1 tbsp (14g) Olive Oil 2 ½ cups (300g) Bread Flour 1 tsp (6g) Fine Sea Salt Instructions (Bread Machine Method): Load the Machine: Add all ingredients into your bread machine pan. It's usually best to add the wet ingredients first (water, starter, oil) and then the dry ingredients (flour, salt). Run the Dough Cycle: Place the pan in your bread machine and select the "Dough" setting. Let the machine do all the work of mixing and kneading! The Long Cold Sleep: Once the dough cycle is finished, remove the dough from the machine, shape it into a ball, and place it in a lightly oiled bowl. Cover tightly and place it in the refrigerator for 18-24 hours. That’s it! Your work for tonight is done. Part 2: The Next Day (Shape & Bake) Instructions: Warm Up & Divide: About 3-4 hours before dinner, take the dough out of the fridge. Turn it out onto a lightly floured surface and divide it into two equal pieces. Form each piece into a ball. Final Proof: Cover the dough balls with a towel and let them rest at room temperature for 3-4 hours until they are soft and airy. Preheat Oven: About an hour before baking, place a pizza stone or steel in your oven and preheat it as hot as it will go (500-550°F / 260-290°C). Shape & Top: Gently stretch a dough ball into a 10-12 inch circle. Transfer to parchment paper, add your favorite toppings.
