Overall, I'd say the Huevos Rancheros from "Oaxaca: Home Cooking from the Heart of Mexico" were good, but not outstanding. The garnishes were fantastic—the guacamole added a delightful creamy element, the fried black beans introduced a slightly bitter note, and the crunch from the corn tortillas was just lovely. The texture and mouthfeel were great, making every bite enjoyable. However, the dish could have used a bit more seasoning. Even a touch of cumin would have elevated the flavors significantly. Additionally, it was fairly oily, which wasn't to my liking. For these reasons, I'd rate it as average.
