Preheat your oven to 425°F. Line a baking sheet with parchment paper. 2. Whisk the flour, sugar, baking powder, and salt in a large bowl until well mixed. 3. Cut in the butter (¼ cubes) with a pastry blender until well incorporated with the flour mixture, about 50 strokes. (The butter should look pea-sized.) 4. Make a little well in the middle for your wet ingredients. 5. Whisk the milk and eggs together in another bowl. Set aside 2-3 tablespoons of the milk mixture in a small bowl to use as your egg wash. Add the remaining mixture to the well in the flour mixture. 6. Using a rubber spatula, fold everything together until just combined (do not overwork). Move the dough to a well-floured counter or pastry mat and gather into a ball. Form into a round disk shape about 9 inches wide, 1 inch thick. 7. Using a floured cutter, cut out 4 scones, pressing the cutter down (do not twist) and recoating the cutter with flour each time. stamp out 4 rounds. Arrange the scones on the baking sheet. 8. Gather the dough scraps, form them into a disk, and repeat to cut out your remaining two scones (try to handle the dough as little as possible). 9. Using a pastry brush or your fingers, brush the tops of the scones evenly with the reserved egg wash mixture. If possible, chill scone dough in the fridge for 10–15 minutes before baking. 10. Bake the scones until risen and golden brown, about 15-16 minutes (ovens differ, so the best way is to check that the bottoms are lightly brown). 11. Transfer the scones to a wire rack and let cool for 5 minutes (if you can wait that long–I usually can’t).
