This dish pairs perfectly with rice, chapati, or paratha. Ingredients: For Marination: • 500g chicken, cut into pieces • 200g curd (yogurt) • ½ tsp red chili powder • 1½ tsp coriander-cumin powder • ½ tsp turmeric powder • 1 tsp ginger-garlic-green chili paste • 1 tsp Kashmiri red chili powder • Salt to taste For the Curry: • Cooking oil • 1 cup fresh methi (fenugreek) leaves, washed and chopped • 1 cinnamon stick (approximately 2 inch) • 3-4 cloves • 1 star anise • ½ tsp black peppercorns (8-10) • 1 tsp cumin seeds • 2 medium onions, thinly sliced • 2 tsp ginger-garlic paste • 1 tsp garam masala • Fresh coriander leaves, chopped (for garnish) • Instructions: Step 1: Marinate the Chicken • In a mixing bowl, add the chicken pieces. • Add curd, red chili powder, coriander-cumin powder, turmeric powder, ginger-garlic-green chili paste, Kashmiri red chili powder, and salt. • Mix well, ensuring the chicken is evenly coated. Cover and set aside for at least 30 minutes (or refrigerate for up to 2 hours for better flavor). • Step 2: Prepare the Methi Leaves • Heat 1 tbsp oil in a heavy-bottomed pan/Kadhai/wok. • Add the washed and chopped methi leaves along with a pinch of salt. • Sauté for 2-3 minutes until the bitterness reduces. • Remove from the pan and set aside. • Step 3: Cook the Curry • In the same pan/kadhai/wok, add some more cooking oil. • Add cinnamon stick, cloves, star anise, black peppercorns, and cumin seeds. Sauté for a few seconds until aromatic. • Add the sliced onions and cook until they turn golden brown. • Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears. • Add the marinated chicken and mix well. • Cook on medium heat until the chicken starts to release moisture and comes to a boil. • Cover and cook for 15 minutes on low-medium heat, stirring occasionally. • Remove the lid and add the sautéed methi leaves. Mix well. • Let the curry simmer for another 5 minutes, allowing the flavors to blend. • Sprinkle garam masala and mix well. • Garnish with chopped coriander leaves. ● Serve hot with steamed rice, chapati, or paratha for a delicious and hearty meal.
