Butternut squash soup is all too often a sweet puree with toasted pumpkin seeds. This is perfectly fine, but I have a different take on it. I believe vegetables like butternut squash and sweet potatoes need savory, spicy and sharp flavors rather than adding more sweet flavors on top.
