Welcome to Day 11 of our 15 Minute Dinners series! As the weather gets colder, nothing beats a cheesy, creamy Seafood Baked Rice to warm you right up. This rich, creamy Seafood Sauce served on top of a bed of warm egg rice and finished off in the oven, melting all the cheese, will have you questioning how such a delicious dish can be made in just 15 minutes. This Seafood Baked Rice recipe is a simplified version of the Japanese famous Seafood Doria. You can use any seafood you prefer, such as Salmon, Clams, Scallops, Calamari, or Shrimp. Today, I'm using Shrimp and Scallops since they cook the quickest. However, if you're making this for date night or guests, adding clams will quickly turn this dish into a gourmet meal. My secret weapon for this Seafood Baked Rice is Dashi powder, which can give any cream sauce an instant flavor boost. I prefer using Dashi powder instead of Dashi stock to flavor the cream and keep the sauce thicker. Traditional Doria is served with fried buttery rice, but to speed up the process, by cracking two eggs and adding a dash of chicken powder, simplified “egg fried rice” is done in just 1 minute.
