
VEGAN CHOCOLATE PUMPKIN PROTEIN MUFFINS//QUICK RECIPE + MACROS
Vegan Chocolate Chip Pumpkin Protein Muffins (Recipe can also be made non vegan. Just substitute protein powder for whey, and egg replacer with 1/2c egg whites) 🍫 1/2 cup granulated Stevia 🎃 1 1/3 cup vegan vanilla protein powder (i used Nutrakey VPro)1/4 cup coconut flour 🍫1/4 cup coconut flour 🎃1 teaspoon cinnamon 🍫4 teaspoons baking powder 🎃1/3 cup Stevia sweetened chocolate chips 🍫1/2 cup egg white replacer(directions will be on back) 🎃1 cup pumpkin purée 🍫1/4 cup coconut milk 🎃1/2 tablespoon vanilla extract Directions 1️⃣Preheat oven to 350°F 2️⃣Spray 12 muffin tins with coconut oil spray 3️⃣In a large bowl, combine your dry ingredients Stevia, (don’t forget yourcoconut flour 😒), protein powder, cinnamon, and baking powder 4️⃣In a separate bowl, combine your wet ingredients, egg white replacer, coconut milk, pumpkin purée, vanilla, And Stirl 5️⃣Stir in chocolate chips 6️⃣Divide evenly even into Pan, I filled 1/4 cup with batter, split it in half and it was perfect 7️⃣Bake for 18 to 20 minutes ENJOY! *frosting (optional) Combine desired amounts of vanilla protein powder, almond butter, coconut milk, and stir until thick and creamy!
