Jerk Seasoning Marinade: Premade hot and spicy jerk seasoning Fresh ground ginger Fresh ground garlic Other spices of your choice Meats: Beef oxtail Chicken breasts Red shrimp Tenderizer: Apple cider vinegar Water Smoking: Hickory wood chips Charcoal grill Jamaica Jerk Alfredo Sauce: Chicken broth Noodles (your choice) Coconut milk Heavy cream Fresh Parmigiano Reggiano cheese Grilled Vegetables: Bell peppers Onion Step 1: Preparing the Meats Start by soaking your beef oxtail, chicken breasts, and red shrimp in a mixture of apple cider vinegar and water for 30 minutes. Step 2: Marinating Next, we're going to marinate our meats. Take a couple of tablespoons of your favorite premade hot and spicy jerk seasoning and mix it with fresh ground ginger, fresh ground garlic, and other spices. Place your meats in separate Ziplock bags, add the seasoning mix, seal the bags, and mix thoroughly. Let them marinate in the refrigerator overnight. Trust me, the longer they marinate, the more flavor they’ll absorb. Step 3: Smoking the Meats Set your charcoal grill to 325°F and prepare to smoke the seafood and meats. We’ll start with the oxtail, smoking it for 1.5 hours. After smoking, transfer the oxtail to an Instant Pot with chicken broth and pressure cook for 40 minutes. This will ensure the meat is tender and falls off the bone. For the chicken breasts, smoke until the internal temperature reaches 165°F. The shrimp should be smoked until fully cooked but not overcooked. The smoky flavor combined with the jerk seasoning will create an explosion of taste in every bite. Cooking the Pasta Step 4: Preparing the Sauce While the meats are resting, let’s get started on our pasta sauce. Boil your noodles in chicken broth until al dente. In a separate pot, warm up the coconut milk and heavy cream, then add freshly shredded Parmigiano Reggiano cheese. Mix until the cheese has melted and the sauce is smooth and creamy. Step 5: Mixing It All Together Once the meats have rested, slice the chicken breasts and pull the beef from the oxtail bones. This will add a nice contrast of textures to the dish. Step 7: Serving Plate your pasta and top it with the grilled bell peppers and onions.
