One bite of this pie, and it’ll become your favorite too! One thing about southerners, we love flavor packed foods, regardless of sweet or savory dishes, (we also put peaches or lemons in our iced tea!) If you’re looking for a pie recipe that’s sure to make your family’s taste buds sing, serve up a slice of this pie! And if you’ve ever felt a little intimidated about making it because of the tricky meringue topping, I’ll share a simple tip with you that is sure to produce a beautiful light and airy cloud of delicious sweet meringue without the dreaded weepy sad meringues of yesteryear’s pies. My secret to a foolproof meringue topping, is to make a Swiss meringue, instead of the usual French meringue! I’ll take you on a step by step guide to help you make this simple and easy pie completely stress free! For the filling: 230g (1 Cup plus 2 tbsp) White granulated sugar. 284g (1 1/4 Cup) Cold water. 115g (1/2 Cup) Fresh Lemon Juice, do not substitute bottled lemon juice. 50g ( 3) Egg yolks. 45g (4 1/2 tbsp) Cornstarch. 42g ( 3 tbsp) Cold unsalted butter. Vanilla bean, or 1 tsp vanilla extract. Generous pinch of salt. For the meringue: 134g (4) Egg whites, completely free of any specks of egg yolks. 100g (1/2 Cup) Granulated sugar. 1/4 tsp Cream of tartar. Pinch of salt. Vanilla bean, or 1/2 tsp of vanilla extract.
