Ingredients: Marinating Chicken: 1 whole Chicken, cut into pieces 1 tbsp Garlic Paste 1 tbsp Ginger Paste Shan Bombay Biryani Masala 500g Yogurt Boiling Rice: Water Cumin Seeds Saabat Garam Masala (Whole Spices) Salt Vinegar 1kg Rinsed Basmati Rice Cooking Biryani: 350ml Cooking Oil 500g Onions, thinly sliced 1 bowl Tomato Paste Marinated Chicken 500g Boiled Potatoes Fried Onion Slices Sliced Ginger Lemons Mint Leaves Milk Infused Food Color Additional Cooking Oil Garam Masala Instructions: Marinating Chicken: 1. In a large bowl, combine the chicken pieces with garlic paste, ginger paste, Shan Bombay Biryani Masala, and yogurt. Make sure the chicken is thoroughly coated. Allow it to marinate for at least 30 minutes, or refrigerate for a more intense flavor. Boiling Rice: 2. In a separate pot, bring water to a boil. Add cumin seeds, saabat garam masala, salt, and a splash of vinegar. 3. Rinse the basmati rice under running water until it runs clear. Add the rinsed rice to the boiling water. Cook until it's almost done, but not fully cooked. The rice grains should still have a slight bite. Cooking Biryani: 4. In a large, heavy-bottomed pot, heat cooking oil over medium heat. Add the thinly sliced onions and fry until they turn golden brown and crispy. Remove some fried onions for garnish. 5. Add the tomato paste to the remaining onions in the pot. Cook until the oil begins to separate from the tomato paste. 6. Now, add the marinated chicken and cook until it changes color and is partially cooked. 7. Place the boiled potatoes into the pot with the chicken. Mix gently to combine. 8. Layer the partially cooked rice over the chicken and potatoes. 9. Top with the fried onion slices, sliced ginger, lemon wedges, mint leaves, and a few drops of milk-infused food color. 10. Sprinkle with garam masala. 11. Cover the pot with a tight-fitting lid and cook on low heat (dum) for 20-25 minutes, or until the rice is fully cooked and the flavors meld together. 12. Gently fluff the biryani with a fork before serving. 13. Your Mazedar Chicken Biryani is ready to be enjoyed! Serve hot with raita or your favorite side dish.
