
How to Make Sourdough Pizza from Scratch—Full Process
This is the full sourdough pizza process, step by step. This video includes all the stretch and folds, fermentation tips, and baking techniques. Sourdough Pizza Dough Recipe (4 pizzas): • 350g water (depends on flour) • 100g active sourdough starter • 10g salt • 500g bread flour Step-by-Step Instructions: 1. Mix starter, water, and salt in a bowl. 2. Add flour and mix until combined. 3. Transfer to a straight-sided container (if possible) and cover for 30 minutes. 4. Stretch and folds: Do four sets, one every 30 minutes. Each set = 8-10 folds. 5. Bulk ferment: Cover at room temperature (21°C) for 4-18 hours until it grows by at least 50%. Do not put it in the oven with the light on. 6. Flour your hands and portion the dough (it will be sticky). Pinch the dough underneath each ball, then transfer to plastic containers for 6 hours to 3 days in the fridge. 7. Take the dough out one hour before baking. Meanwhile, place a pizza stone in the top third of your oven and preheat at 288°C for one hour. 8. Shape the pizza, place on parchment paper, and bake for 5-6 minutes until crispy.
