Lemon Curd: 4 egg 50 ml lemon juice 50 g sugar 20 g butter 5 g flour TIP: On low to medium heat and with CONSTANT STIRRING, add the eggs and keep stirring until it thickens. Meringue: 100 g egg whites 300 g sugar 70 g water TIP: Heat the sugar and water until it boils, let the syrup simmer at the same temperature until it looks clear. Meanwhile, beat the egg whites until stiff. While continuously beating, slowly pour the simmering syrup down the side (not all at once). Beat for about 4 minutes until the meringue is shiny.
