My Hoppin’ John recipe is a traditional one-pot African American dish that originated in South Carolina from African slave descendants. It’s a very hearty dish and in its original intent, incredibly simple to prepare. Ingredients 2 c of cowpeas/black eye peas 1/2 pound thick-cut bacon, sliced into 1” pieces 1 yellow onion, diced 2 celery stalks, diced 2 green onions, chopped 2 carrots, diced 3 garlic cloves, minced 3 ½ - 4 c chicken stock 3-5 sprigs fresh thyme, plus more to taste ½ -1 tsp crushed red pepper flakes (to taste, optional) 1 c long-grain rice 2 c collard leaves; stems removed and chopped 2 Bay leaf 7 oz andouille sausage or turkey sausage 1 medium red bell pepper 1 tbsp creole seasoning 1 tbsp granulated garlic 1 tbsp granulated onion 1 tsp chicken bouillon, mixed with 1/2 c water (optional) 1 tsp dry basil 1 tbsp black pepper 1 tbsp Kosher Sal, plus more to taste 1 tbs olive oil Note: To make vegan don’t use the meat and replace chicken stock with vegetable stock.
