In today's video, I am going to smoke crappie over hickory wood. The simple brine for the one pound of crappie that I'm going to smoke is 3 cups of water, 3 tablespoons of light brown sugar, and 1 and a half tablespoons of salt. I'll brine the crappie for an hour, let the crappie sit out at room temperature for about an hour and a half (the fish will develop a shiny film), and then smoke the crappie for 45 minutes. It's delicious! You can make fish tacos with it, eat it straight, or mix it with cream cheese for a tasty dip.
