INGREDIENTS For the bars: •1 cup unsalted butter, room temperature •2 cups granulated sugar •2 large eggs, room temperature •1 ½ tsp pure vanilla extract •2 ½ cups all-purpose flour •1 tsp kosher salt •1 tsp baking soda •1 tsp baking powder •¾ cup semisweet chocolate chips For the caramel: •¾ cup sugar •3 Tbsp corn syrup •4 Tbsp butter •3 Tbsp heavy cream •¼ tsp kosher salt •1 tsp flaky sea salt, like Maldon •1 tsp vanilla For the marble topping: •1 cup semisweet chocolate chips •½ cup white chocolate chips •1–2 tsp coconut oil LET'S GET COOKING... 1.Heat oven to 350ºF. Line a 9x9 pan with parchment paper, leaving a 2-inch overhang on all sides. Spray with non-stick spray. 2.Beat together butter and sugar until light and fluffy. Add the eggs and the vanilla and beat until incorporated. Add flour, salt, baking soda, baking powder, and continue to mix until combined. Use half to line the bottom of the prepared sheet trays. Stir the chocolate chips into the remaining half. 3.Press sugar cookie dough into the bottom of prepared pan and bake for 15 minutes, until slightly golden. 4.In a medium saucepan, combine sugar and corn syrup and cook, while stirring, over medium heat, until it reaches a golden brown caramel color. Turn off heat, stir in butter, cream, salt and vanilla until combined. Let cool for 10 minutes. 5.Spread cooled caramel sauce over the dough, leaving an inch border. 6.Dollop cookie batter over caramel and carefully spread out to form a smooth layer. Bake for 20 minutes until golden and set. Cool completely while preparing marble topping. 7.Microwave semisweet and white chocolate separately with a teaspoon of oil in each until melted. 8.Spread chocolate layer evenly over cookie bars. Drizzle on white chocolate and using a toothpick, gently marble the two chocolates. Let set completely for at least 1 hour before cutting into bars.
