Ingredients: 1 cup vermicelli (semai) 4 cups full-fat milk ½ cup sugar (adjust to taste) 2 tbsp ghee ¼ cup chopped nuts (almonds, cashews, pistachios) 2 tbsp raisins ½ tsp cardamom powder 2 tbsp condensed milk (optional, for extra creaminess) Few strands of saffron (optional) Instructions: 1. Roast the Vermicelli: Heat ghee in a pan, add vermicelli, and roast on low heat until it turns golden brown. Remove from the pan and set aside. 2. Boil the Milk: In a heavy-bottomed pan, bring the milk to a boil, stirring occasionally to prevent burning. 3. Cook the Vermicelli: Add the roasted vermicelli to the boiling milk and let it cook on low heat for 8-10 minutes until it softens. 4. Sweeten the Dish: Add sugar, condensed milk (if using), and cardamom powder. Stir well and let it simmer for another 5 minutes. 5. Add Dry Fruits: Toss in chopped nuts, raisins, and saffron strands. Mix well and cook for 2 more minutes. 6. Serve: Turn off the heat and let it cool slightly. Serve warm or chilled.
