2 minute Eggless Fluffy Pancake Recipe | बस 2 मिनट में बनाइए बिना अंडे के पैनकेक | Chef Sanjyot Keer Here's a simple recipe for cake Ingredients: 1½ cups maida (all-purpose flour) ¾ cup sugar ½ cup oil (vegetable oil or any flavorless oil) 1 pouch Eno (fruit salt) 1 cup milk 1 teaspoon vanilla essence Instructions: Preheat your oven or pan to 180°C (350°F). Grease and flour a cake tin or line it with parchment paper to prevent sticking. In a large mixing bowl, sift the maida to remove any lumps. Add sugar to the maida and mix well. Make a well in the center of the dry ingredients and pour in the oil, milk, and vanilla essence. Mix all the ingredients together until well combined and smooth. Do not overmix. Lastly, add the Eno (fruit salt) to the batter and gently fold it in until just combined. Avoid overmixing at this stage to keep the cake fluffy. Pour the batter into the prepared cake tin and smooth the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the cake from the oven and let it cool in the tin for about 10 minutes. After 10 minutes, transfer the cake to a wire rack to cool completely. Ingredients for Chocolate Whipped Cream: 1 cup heavy whipping cream ½ cup powdered sugar (Optional) 3 tablespoons cocoa powder 1 teaspoon vanilla extract (Optional) Instructions: Chill a mixing bowl and beaters in the freezer for about 15 minutes before whipping the cream. In the chilled mixing bowl, add the heavy whipping cream, powdered sugar, cocoa powder, and vanilla extract. Using an electric mixer or a whisk, beat the mixture on medium-high speed until stiff peaks form. Be careful not to overbeat. Once the chocolate whipped cream is ready, place one layer of the cooled cake on a serving plate or cake stand. Spread a generous layer of the chocolate whipped cream over the top of the cake layer. Carefully place the second layer of the cake on top of the whipped cream layer. Use the remaining chocolate whipped cream to frost the top and sides of the cake evenly. You can use an offset spatula or a knife to spread the whipped cream. Optionally, you can decorate the cake with chocolate shavings, sprinkles, or fresh fruit. Chill the cake in the refrigerator for at least 30 minutes before serving to allow the whipped cream to set. Once chilled, slice and serve your delicious layered cake with chocolate whipped cream icing. Transfer this batter in a piping bag to get perfect round shape pancakes. Use a non-stick pan and heat it well, once heated well, cut the piping bag keeping the hole 2 cm in diameter and pipe it over hot pan, you can keep the pan cake size as per your preference, keep the flame to medium heat and cook for a minute on one side, carefully flip and cook for the same time on the other side until golden brown in colour. Your eggless fluffy pancakes are ready.
