Channel: Masala TV Chef: Zarnak Sidhwa Featured Recipes: Baked Fish Ingredients: • 500g fish fillets • 1 tsp salt • 1 tsp black pepper • 1 tsp oregano • 1 tsp ground coriander seeds • 1 tsp paprika • 1 tsp red chili flakes • 1 tbsp minced garlic • 15 basil leaves, sliced into ribbons • 4 tbsp olive oil • 1 tbsp lemon juice • 1 capsicum, sliced into rings • 1 onion, sliced into rings Method: 1. Marinate the fish fillets with olive oil, lemon juice, garlic, seasonings, basil, and salt for about 30 minutes. 2. Line a baking dish with capsicum and onion rings, and place the marinated fish on top. Pour the remaining marinade over the fish. 3. Bake at 200°C for 15-20 minutes, or until the fish is cooked through and flaky. Serve hot! Fish Kebabs Using Leftovers Ingredients: • 1 cup leftover fish • ½ cup leftover capsicums and onions • 1 tbsp panko bread crumbs • Pinch of salt • ½ tsp red chili flakes • 1 tbsp minced garlic • 1 egg • Extra breadcrumbs for coating Method: 1. Flake the leftover fish, chop the capsicums and onions, and mix them together. 2. Add half a beaten egg and breadcrumbs, mixing gently (avoid overworking to keep the kebabs light). 3. Shape into kebabs, dip in the remaining egg, and coat in breadcrumbs. 4. Deep fry in hot oil until golden and crispy.
