I’m using the lamination technique here to add some dough strength to my 100% spelt sourdough loaf, which is clocking in around 80% and is fresh milled whole grain. Lamination will be followed up later with some coil folds, until the dough holds its shape on its own. #freshmilled #sourdoughbaking #lamination
