
Easy Thai Tom Yum Soup Recipe - Neena's Thai Kitchen
Tom Yum Soup is a type of hot and sour Thai soup and always everyone's favorite soup. It can be cooked with all kinds of protein and the ingredients are slightly different. Today, I will share with you a recipe of Tom Yum Goong or Tom Yum Shrimp which is the most popular soup among Thai people and Thai food lovers. This is easy to make and very healthy. Tom Yum Prawns Ingredients: 4 cups water or 2 cans of chicken broth 14.5 oz. 2 stalks lemongrass- bash with mallet or the handle of knife and cut to 3 pieces 8 slices galangal- 1/8" slices 8 Kaffir lime leaves - crush or tear off leaves to release the flavor 1/2 red onion or a few shallots, cut to big pieces 1 Roma tomato, 6 cherry tomato, cut to big pieces 2-6 Thai Chili, cut half or smash (est. 2=mild, 4=medium, 6=spicy) 1/2 lbs. shrimp or 8-10 shrimp, taste better with head-on and shell 2 cups of mushroom any kind. In video, we used oyster and beach mushroom 1/4 cup or small bunch cilantro 3 tbsp. lime/lemon juice 2 tbsp. fish sauce 1 tbsp. Thai roasted chili paste (optional but will really make it tastier) 1 tsp sugar 1/4 tsp or few pinches salt Cooking instruction 1. Stock: Add chicken broth, lemongrass, galangal, and kaffir lime leave in a pot, bring to boil, simmer for 5 minutes, and strain or fish out the aromatics 2. Add red onion, tomato, and chili and bring the stock to boil 3. Add shrimp, fish sauce, salt, sugar, and Thai roasted chili paste and cook for 1 - 2 minutes or until the shrimp is cooked 4. Add mushroom, cook about 20 seconds and turn off the stove, do not over cook shrimp and mushroom 5. Add lime/lemon juice, taste test and adjust per your taste (add more lemon or fish sauce). The fish sauce or lime/lemon juice will taste differently each batch or brand 6. Add cilantro and give a final stir. The lime juice and cilantro taste fresher and more vibrant when not boiled. Serve: Tom yum soup is good with jasmine rice. You can turn it into Tom yum noodle by adding the cooked rice noodle and add more fish sauce & lemon. For the creamy version: At the end of cooking, add 5 tbsp. evaporated milk, 1 to 2 tbsp.
