Lobia Masala is a flavorful and nutritious North Indian dish made with black-eyed peas in a spiced gravy. Here’s a simple recipe: Ingredients: 1 cup dried black-eyed peas (lobia), soaked for 6-8 hours or overnight 1 large onion, finely chopped 1 large tomato, pureed or finely chopped 2 green chilies, chopped (optional) 1 tbsp crushed ginger-garlic Pinch of turmeric powder 1 tsp red chili powder 1 tsp coriander powder 1/4 tsp garam masala Salt to taste 1 tbsp cooking oil 1/2 tsp cumin seeds 1 bay leaf 1-2 dried red chilies (optional) Fresh cilantro, chopped (for garnish) 1-2 cups water (for cooking) Instructions: Prepare the Black-Eyed Peas: 1. Drain and rinse the soaked lobia overnight. 2. In a pressure cooker or pot, add the black-eyed peas with 3 cups of water. Cook until soft and tender. In a pressure cooker, this usually takes about 3-4 whistles; in a regular pot, it may take about 20-25 minutes. Once cooked, set aside. Prepare the Masala: 1. Heat oil in a large pan over medium heat. Add cumin seeds, bay leaf, and dried red chilies (if using). Let them splutter. 2. Add chopped onions and sauté until golden brown. 3. Add ginger-garlic paste, and cook for a minute until the raw smell disappears. 4. Add pureed tomatoes and cook until the oil starts to separate from the masala (about 5 minutes). 5. Add the Spices: Add turmeric powder, red chili powder, coriander powder, and curds. Stir well and cook for 2-3 minutes, allowing the spices to meld with the tomato-onion mixture. 6. Combine Lobia and Cook: Add the cooked lobia (black-eyed peas) along with any water they were cooked in to the masala mixture. Stir well to combine. 7. Add salt to taste and simmer for 10-15 minutes, allowing the flavors to blend. If the gravy is too thick, you can add some more water to adjust the consistency. 8. Finish and Garnish: Once the masala has thickened to your desired consistency, sprinkle garam masala and stir. Garnish with freshly chopped cilantro. Serving: Serve hot with roti, naan, or rice.
