Another year has passed and the New Year has arrived. This means we are cooking and eating BLACK-EYED PEAS AND CABBAGE, a dish that wishes health, wealth and prosperity. This stew is a New Year's Day food tradition across the American south. It is usually served with cooked rice and cornbread. BLACK-EYED PEAS & CABBAGE 1-pound black-eyed peas, soaked overnight nonstick spray 2 Tbsp vegetable oil 1 (12-ounce) package diced cooked ham 1 onion, chopped 1 bell pepper, chopped 2 ribs celery, diced 4 large cloves garlic, minced 1/4 tsp salt 1/4 tsp freshly ground black pepper 1/8 tsp cayenne pepper 1 Tbsp Creole seasoning 1 tsp Italian seasoning 2 large bay leaves 1 (14.5-ounce) can unsalted diced tomatoes 4 - 5 cups low sodium chicken broth 1/2 - 1 Tbsp all-purpose flour 1/4 - 1/2 head of cabbage, chopped THE NIGHT BEFORE COOKING, SOAK BLACK-EYED PEAS. 1. Rinse and drain beans. Set aside. Over medium heat, spray a Dutch oven or a large pot with nonstick spray and coat it with vegetable oil. Add ham. Sauté until browned on all sides, 3 - 5 minutes. Remove ham from pot and set aside. 2. Add onions, bell pepper and celery. Stir to combine, scraping drippings from the bottom of pot. Cook until vegetables begin to soften and onions become translucent, about 5 minutes. Stir in garlic. Cook 1 minute. Add dried seasoning, including bay leaves. Stir and cook 1 - 2 minutes. 3. Return ham to pot. Pour in diced tomatoes, black-eyed peas and chicken broth. Bring to a boil and reduce heat to simmer. Cover pot with a lid. Simmer 1 hour, stirring halfway through. 4. At 1 hour of cooking, remove 1 cup of black-eyed peas mixture, without meat. Set aside to cool, about 20 - 25 minutes. While removed beans are cooling, add cabbage to pot. Combine. Cover pot and continue cooking, 30 minutes. 5. After black-eyed peas mixture has cooled for 20 - 25 minutes, place into a high-powered blender along with flour. Process until combined, 30 seconds. Immediately stir blended black-eyed peas mixture into pot and cook an additional 5 minutes. This is the last 5 minutes of the 30 minutes of cooking mentioned in STEP 4. Remove from heat. You can also add the blended beans mixture into pot after the 30 minutes of cooking in STEP 4 has completed, stir to combine and immediately remove from heat. Eat as is or serve with cornbread or cooked rice. We hope you have enjoyed this delicious and comforting meal. It is seasoned well and an easy one pot meal recipe to cook.
