Ep.16 [K-FOOD] Dried Pollock Soup (Hwangtaetang) Chef Ryan shares with us how to make hwangtaetang, or dried pollock soup. Dried pollock is simmered in a light, savory broth made with dried kelp and Korean radish. Tofu, Korean leek and soybean sprouts are added for extra flavor and texture. Learn how to make this heartwarming winter soup, perfect as a comforting meal or a hangover cure. [Ingredients] 40g Dried pollock 200g Korean radish 100g Tofu 50g Soybean sprouts 1/3 Korean leek 3 Garlic cloves 1 Red chili 1 Green chili 1T Fish sauce 2t Sesame oil 50ml Cheongju (Rice wine) 20g Dried kelp [Directions] 1. Break 40g of dried pollock into smaller pieces. Rinse and squeeze out excess water. Coat with 2t of sesame oil. 2. In a pot, combine 400ml of water and the dried pollock. Bring to a boil and reduce to medium-low heat for 5 min. 3. Turn the heat back up and add 50ml of cheongju, 200ml of water and 20g of dried kelp. Bring to a boil and simmer for 5 min. 4. Peel 200g of Korean radish and cut into thin slices. Remove the dried kelp from the stock and add the radish and 3 cloves of minced garlic. Cover and simmer for 5 min on medium-low heat. 5. Cut 100g of tofu into bite-size pieces. Cut 1/3 of Korean leek lengthwise and again into thin strips. Add the tofu and leek to the pot. 6. Add 50g of soybean sprouts and cook with the lid off for another 5 min. 7. Turn off the heat and season with 1T of fish sauce. Garnish with chopped red and green chilies.
