Ingredients: For the Stuffed Salmon: 8 salmon fillets (skinless, boneless) 8 oz cream cheese (softened) 1/2 cup roasted red pepper (chopped) 1 cup spinach (fresh or frozen, chopped) 1 cup Italian blend cheese (shredded) Salt and pepper to taste For the Citrus Rice: 2 cups white rice 4 cups water Juice of 2 lemons Juice of 2 limes Juice of 1 orange Salt to taste For the Citrus Sauce: 4 tbsp butter 2 tbsp olive oil 1 cup cherry tomatoes (halved) Juice of 1 lemon Juice of 1 lime Juice of 1 orange Salt and pepper to taste Instructions: 1. Prepare the Stuffed Salmon: Preheat your oven to 375°F (190°C). In a bowl, mix together the softened cream cheese, chopped roasted red peppers, chopped spinach, and shredded Italian cheese. Season with a pinch of salt and pepper. Cut a pocket into each salmon fillet (be careful not to cut all the way through). Stuff each fillet with the cream cheese mixture and secure the edges with toothpicks or kitchen twine. Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the salmon is cooked through and the stuffing is melted. 2. Prepare the Citrus Rice: In a medium saucepan, combine the white rice and water. Bring to a boil, then cover and reduce the heat to low. Simmer for about 18 minutes, or until the rice is cooked. Once the rice is done, fluff it with a fork and stir in the citrus juices (lemon, lime, and orange). Add salt to taste. 3. Prepare the Citrus Sauce: In a small saucepan, melt the butter and olive oil over medium heat. Add the halved cherry tomatoes and sauté for 3-4 minutes, until they soften. Add the citrus juices (lemon, lime, and orange) to the pan and simmer for 2-3 minutes to combine the flavors. Season with salt and pepper to taste, and remove from heat. 4.
