Ingredients: 375g bread flour 125g whole wheat flour 83g oats 312g/ml lukewarm water 40g honey 55g milk 40g oil 11g salt 10g chia seeds 10g yeast For the Egg Wash and Topping: 1 egg Optional: sesame seeds, pumpkin seeds, or poppy seeds for sprinkling Production Steps: 1 In the stand mixer bowl, add oats, chia seeds, and lukewarm water. Allow to soak for 20 minutes. 2- Add yeast, honey, and milk. Using the hook attachment, stir on low speed for 1 minute. 3- Add the bread flour, whole wheat flour, salt, and oil. Mix on low speed for 2-3 minutes until it reaches the clean-up stage. 4- Continue mixing on medium speed for an additional 3-4 minutes. 5- Knead the dough on the bench until it becomes smooth. Round it. 6- Spray a bowl with oil, place the dough inside, and lightly spray the top of the dough. Cover with plastic wrap and ferment for 1 hour or until doubled in size. 7- Degas the dough and scale into 95g pieces. It will yield about 11 buns. 8- Pre-shape the dough by pulling the edges into the center and rounding it on the bench. Cover and let rest for 5 minutes. 9- For the final shape, flatten each piece of dough using a rolling pin. 10- Pinch the seam together tightly to seal, then roll up the dough to shape the bun. 11- Place the logs seam-side down on a sheet pan. Cover and proof for 45-60 minutes. 12- Brush with egg wash, score the buns with a lame or sharp knife, and sprinkle with sesame, pumpkin, or poppy seeds (optional). 13- Bake in a preheated oven at 370°F (190°C) until golden brown.
