#খাসির_মাংস_ভুনা_বা_কষা, #Mutton_Vuna_or_Mutton_Kosha_Recipe, #Eid_Special, nian’s cooking diary INGREDIENTS: 1. 1 kg mutton / khashir mangsho 2. 1 tsp salt 3. 1 tbsp yogurt 4. ½ cup chopped onion 5. 2 bay leaves, 3 cinnamon, 1 large black cardamom, 3 small cardamom, 4 cloves 6. 1 tbsp yogurt 7. 2 tsp salt 8. 2 tsp turmeric powder 9. 3 tsp red chili powder 10. 1 tsp coriander powder 11. 1 tsp cumin powder 12. 1 tbsp garlic paste 13. 1 tbsp ginger paste 14. ½ tsp roasted cumin powder 15. 1/3rd cup oil 16. 2 cup hot water. PROCEDURE: 1. Let’s see wash process of mutton to remove it’s smell. Add 1 tbsp yogurt and 1 tsp salt with mutton. Mix all. Cover this with a plate in room temperature for 30-60 minutes. Then wash this with enough water. In this process of washing, raw smell of mutton will remove nicely. 2. Take washed mutton. Add red chili powder, turmeric powder, coriander powder, cumin powder, salt and yogurt with mutton. Mix all properly. Now keep this to marinate for some times or cook this instantly. 3. Heat oil in a cooking pan. Add bay leaves, cinnamon, large black cardamom, small cardamom and cloves in hot oil. Stir and fry for few seconds. 4. Add chopped onion. Stir and mix onion. Fry onion till light golden colour. Add garlic and ginger paste. Stir all. Saute ginger garlic paste for a minute to remove it’s raw smell. 5. Add marinated mutton. Mix all properly. Then cover pan in low-medium flame for 15 minutes. 6. 15 minutes later, open the lid. Stir mutton. Again cover pan for 15-20 minute. 7. 20 minutes later open the lid. Enough water already drains from mutton. Stir and mix all nicely. In this water, sauté mutton till oil separated and dry water from mutton. Cover this around 20-30 minutes in low-medium flame. But be careful, mutton shouldn’t burn from downsides. 8. 30 minutes later, open the lid. Between this 30 minutes, I stir this 2-3 times to avoid burning. Mutton sauted perfectly, oil separate from mutton. Stir all. Then add hot water. Mix all and cover pan in medium flame for 40-50 minutes. 9. Open lid around 50 minutes later. Stir all. Check that, mutton tender perfectly. Add roasted cumin powder and mix all. Cover pan for 2 minutes to spread flavor of roasted cumin in all mutton. 10. Open lid, mutton kosa or mutton vuna perfectly cooked. Also gravy is perfect. Put off the flame and serve this yummy, mouthwatering mutton vuna in a bowl.
