1,000 Layer Potatoes || Keep It Simple (AKA the TikTok Potatoes or Potato Pavé)

These 1,000 Layer Potatoes aren't necessarily super difficult to make, but moreso a challenge of patience. All the steps require a lot of time and repetition, but you can definitely make them at home! INGREDIENTS: 5 pounds of yukon gold/idaho potatoes ½ cup of butter, melted (beef tallow or duck fat, even better!) ½ tbsp salt ½ tbsp pepper Optional, flakey sea salt for garnish Vegetable oil for frying 2-3 tbsp flour INSTRUCTIONS: 1. Begin by slicing all of your potatoes on a mandolin. A mandolin is necessary to get the proper thinness. Aim to have them about as thin as potato chips, slightly thicker is ok, but not much more than that. 2. Toss your cut potatoes in a bowl with your melted butter or equivalent, salt, pepper, and flour. Make sure everything is evenly coated. 3. In an 8x8 pan lined with parchment paper, begin lining your potatoes on top of one another, one layer at a time. This will take some time. If you’re impatient like me, you’ll eventually “roughly” stack everything together and just pressure it all in. 4. Cover your potatoes with tin foil, bake for 3 hours in an oven at 300F. 5. When your potatoes are finished cooking, remove tin foil and replace with parchment paper, and weigh down the potatoes with canned goods or equivalent (this is to keep the potato “cake” all together) and put in the fridge to cool overnight. 6. The next day, get the potatoes out of your fridge and cut them into even sized squares or rectangles. Once you have your shapes, freeze for an additional hour before frying. 7. Fill a dutch oven or pot with your vegetable oil, and at medium high heat bring the oil to 375F. Fry your potatoes for about 5-6 minutes, and set on a cooling rack, and immediately garnish with flakey sea salt. 8.
