Ingredients: 500 g (4 cups) white bread flour 1 tosp honey 7 g rapid rise yeast 12 g (2 scant teaspoons) sea salt 100 g (3 ½ 0z) sourdough starter discard, or active starter 400 g (1½ cups + 3 tbsp) water 2 tosp virgin olive oil for the bowl 4 tbsp virgin olive oil for the bread or as needed ½ tsp coarse sea salt flakes Mix water, yeast, honey, salt, discard and flour. Cover and let sit 1hr in warm spot. After resting in a warm spot for one hour, you will do stretch and folds every 30 minutes, four times. Cover, let rest after each time. Put parchment paper in a 9x13 pan and cover with olive oil. Spread out dough and oil the top of your dough. Cover and let sit in a warm spot until it doubles in size. Dimple dough, Add toppings. Bake 425 for 25 minutes.
