BBQ PORK CHAR SIU (Most Favorite Chinese Takeout Menu) Ingredients: 500g pork shoulder Sauce Ingredients: 2 tbsp brown sugar 1 tbsp oyster sauce 1 tbsp Shaoxing wine or red wine 1 tbsp light soy sauce 1 tbsp hoisin sauce ½ tbsp red fermented bean curd ½ tsp ground Chinese five-spice ½ tbsp salt 1 tbsp garlic powder ½ tsp salt 4-5 drops red food dye (optional) Basting Ingredients: 2 tbsp honey mixed with 2 tbsp water (add more red food coloring, optional) Method: 1. In a bowl, mix all the sauce ingredients together (add food dye if desired). 2. Cut the pork shoulder into long slices, about 1 to 1.5 inches thick. Poke the meat with a knife or fork to help it absorb the marinade. 3. Place the pork and marinade in a ziplock bag. Massage the pork for 2-3 minutes, ensuring the sauce is evenly absorbed. Squeeze out any air from the bag and seal it. Marinate in the fridge for at least 6-8 hours, or overnight for the best results. 4. Before cooking, let the pork sit at room temperature for 1 hour. Oven Instructions: 1. Preheat the oven to 220°C (425°F). Line a baking pan with aluminum foil for easy cleaning. Place a baking rack on top of the foil and add hot water to the pan to generate steam during cooking. 2. Lay the marinated pork on the baking rack and bake for 50 minutes. 3. Flip the pork every 15 minutes, basting both sides with the leftover marinade. After 50 minutes, baste both sides with the diluted honey. 4. Increase the oven temperature to 230°C (450°F) and bake for an additional 5 minutes, basting with the diluted honey. 5. Let the pork rest for a few minutes before cutting it into bite-sized pieces. Serve in a Chinese takeout box or on a plate. Air Fryer Instructions: 1. Preheat the air fryer to 350°F (180°C). 2. Air fry for 35-40 minutes, flipping the pork every 10 minutes to prevent burning.
