This video is about HOW TO SMOTHER CABBAGE W HAM SHANKS AND NEW POTATOES. This time of year cabbage is plentiful so we always take the opportunity to cook up some cabbage dishes. Smothered Cabbage is a family favorite starting from my younger days when mom cooked it. I know this is a favorite dish throughout my family. We all have a different twist when it comes to cabbage but here's my twist. Follow along. I think you'll be happy with this recipe. INGREDIENTS 1 Large head of cabbage 2 Cans of New Potatoes drained. 1 1/4 cups Mirepoix (onion, bell pepper, celery, parsley) 1 1/2 Tbsps. Minced Garlic 1 Tsp. Salt 1 Tsp. Black pepper 1 Tbsp. Caliente' Hot Sauce (or any substitute you like) 3 Smoked Ham Shanks 2 Strips Smoky bacon 2 Tbsp. butter (salted) 1 Cup Chicken Stock INSTRUCTIONS First, cut up your cabbage and bacon. Then cut up your ham shanks. Or leave them whole. Using a 7 quart Dutch oven, start rendering the bacon just for 2 minutes. It's not necessary to render completely. Add in olive oil and butter and allow enough time for the butter to melt down. Then add in your mirepoix and stir. After a few minutes, add in the chicken stock and bring the heat up to high. Add in half of the chopped cabbage. Smother for 5 minutes with the lid on. Now flip the cabbage from the bottom over to the top. Cover and continue cooking for 5 minutes. Now add in your ham shanks. And add in the rest of the cabbage. Lid back on the cook for another 5 minutes. Once again, flip cabbage from the bottom to the top. You will continue this procedure until your cabbage started to wilt down. Add in your new potatoes. Fold them in and simmer for 30 minutes. The total cooking time will be about 1 hour. Salt and Pepper to taste. Chef's Notes: Serve with some hot buttered corn bread. New Potatoes come in a can. Look for New Potatoes at your grocery. My cabbage recipe is my own. You can easily change it to suit your taste. Use different meats such as pickled pork. Or try something different. Using Andouille Sausage is good too. Add carrots early on in large chunks to give them time to soften. My mom loves carrots. Carrot also gives the cabbage a sweet taste. So give it a try. You have nothing to lose and everything to gain according to folk tales that promise good health, good luck and prosperity by eating a multitude of food items for the new year. My family relied on smothered cabbage, fried cabbage, turnip, mustard or collard greens and black-eyed peas all served together on the same plate along side a nice hunk of ham, pickled pork, a fried pork chop or Pam's favorite, corn beef.
