INSTAGRAM: abby_thed / abby_thed CREAMY TOMATO SOUP 2-3 tbs tomato paste 32 oz veggie broth 2 - 2 oz whole peeled tomatoes 1 red bell pepper, chopped 1 onion, chopped 15 oz tomato sauce salt and pepper to taste minced garlic for flavor 1 tsp oregano 1/4-1/2 cup heavy cream -combine all of the ingredients into the crockpot except for the cream. cook on low for 8 hours or high for 4. use an immersion blender to puree the soup when it is done cooking. Stir in the heavy cream and top with croutons and cheese. BUTTERNUT SQUASH SOUP 1 butternut squash, seeded/peeled and chopped 1 onion, chopped 1/2 cup carrots, chopped 32 oz chicken broth salt and pepper to taste 1/2 tsp cayenne 1-2 sage leaves 2 tbs minced garlic 1/2 tsp thyme 1/4 cup heavy cream -combine all of the ingredients into the crockpot except for the cream. cook on low for 8 hours or high for 4. use an immersion blender to puree the soup when it is done cooking. FAGIOLI SOUP 1 lb ground beef, already cooked 1/2 cup carrots, chopped 1/2 cup celery, chopped 1 onion, chopped 28 oz crushed tomatoes 32 oz beef broth 1-2 bay leaves 1/2 tsp oregano 1/2 tsp basil 1/2 tsp thyme salt and pepper to taste 1-2 cannellini beans, drained 1-2 red kidney beans, drained optional: small pasta shells -combine all of the ingredients into the crockpot except for the pasta. cook on low for 8 hours or high for 4. stir in the pasta shells when it is done cooking and cover with the lid. the steam will cook the pasta. when pasta is soft you can serve and top with cheese. WILD RICE SOUP 1-2 lbs frozen chicken breast/thighs 2 wild rice packages (with seasoning) 1/2 cup celery, chopped 1/2 cup carrots, chopped 1 onion, chopped 1 tsp poultry seasoning optional: 1/2 cup heavy cream/milk -add all of the ingredients into the crockpot and cook on low 8 hours or high 4 hours. shred the chicken when it is done cooking and serve. if wanting a creamier taste, add in 1/2 cup of milk or heavy cream. SWEET POTATO CHILI 1 lb ground beef, cooked 1 chili seasoning packet 1 green bell pepper washed and chopped 32 oz beef broth 1 small can of rotel or diced tomatoes 1 onion, chopped 2 frozen packages of sweet potatoes -combine all of the ingredients into the crockpot except for the sweet potatoes. cook on low for 8 hours or high for 4. stir in the sweet potatoes and place the lid back on to cook. when the sweet potatoes are thawed you can serve. top with cheese and enjoy.
